The 2023 Tolosa Central Coast Chardonnay showcases the winery’s commitment to producing expressive wines that reflect the unique terroir of California’s Central Coast.

Tasting Notes
  • Appearance: Pale yellow with green highlights.

  • Aromas: Clean, fresh, and lively aromas of pear, jicama, and Meyer lemon, accented by notes of ocean spray, minerals, and apple blossom.

  • Palate: Medium-bodied with rich flavors of melon, yellow apple, and tangerine, framed by balanced acidity and a clean, mineral-driven finish.

Food Pairings with Caribbean Cuisine

This Chardonnay’s bright acidity and fruit-forward profile make it a versatile companion to various Caribbean dishes:

  • Grilled Seafood: Pairs excellently with grilled fish like snapper or mahi-mahi, where the wine’s citrus and melon notes complement the flavors of the seafood.

  • Spicy Dishes: The wine’s acidity balances the heat in spicy dishes such as jerk chicken or spicy shrimp, providing a refreshing contrast.

  • Tropical Salads: Salads featuring ingredients like mango, avocado, or citrus fruits harmonize with the wine’s fruit flavors, enhancing the overall dining experience.

Vineyard Technical Notes
  • Vineyard Sources: The grapes for this vintage were sourced from two distinct areas in Monterey County: one near Gonzales and the other further north in Arroyo Seco. The Arroyo Seco vineyard, characterized by rocky soils and a cool, windy climate, produces grapes with bright flavors and acidity. In contrast, the Gonzales vineyard, with more clay soils and slightly warmer conditions, yields ripe fruit flavors.

  • Winemaking: Fermentation occurred primarily in stainless steel tanks with a variety of yeasts, with just 4% fermented in neutral French oak. The wine did not undergo malolactic fermentation; however, light stirring of the lees during five months of aging provided additional richness.

This 2023 Chardonnay exemplifies Tolosa’s dedication to crafting wines that are both expressive and reflective of the Central Coast’s unique terroir.
