On the nose, it exudes captivating aromas of black currant, cassis, ripe blackberry, complemented by sweet oak smoke, cedar, tobacco leaf, graphite, and floral hints of violets. The palate is robust and opulent, showcasing voluptuous dark berry flavors intertwined with sophisticated nuances of sandalwood, dried herbs, anise, vanilla bean, nutmeg, dark chocolate, and spice. The finish is long and polished, reflecting the wine’s impeccable balance and structure.

Food Pairing Suggestions for a Caribbean Climate

Pairing this full-bodied Cabernet Sauvignon with Caribbean cuisine requires thoughtful selection to harmonize with the region’s vibrant flavors and warm climate:

  • Grilled Meats: Dishes like jerk-seasoned grilled chicken or pork offer smoky and spicy notes that complement the wine’s rich fruit and spice profile.

  • Spiced Lamb: Caribbean-style curried lamb or lamb kebabs with aromatic spices can enhance the wine’s complexity and depth.

  • Aged Cheeses: Hard cheeses such as aged Gouda or sharp cheddar provide a savory contrast to the wine’s lush fruit flavors.

It’s advisable to serve the wine slightly cooler than room temperature, around 60-65°F (15-18°C), to maintain its refreshing qualities in a warm Caribbean setting.

The 2021 growing season began with one of the driest winters on record, followed by a mild spring and summer with no adverse heat events. Due to the lack of precipitation, canopy growth was limited, resulting in very small berries and clusters. To ensure ideal ripening and flavor development, vine water stress was closely monitored, and a targeted irrigation strategy was applied. While the drought yielded a small crop, the long, temperate growing season combined with ideal harvest weather produced dark and powerful wines with concentrated aromas and flavors, excellent structure, and lush, mouth coating tannins.

This meticulous attention to vineyard management and winemaking practices has culminated in a wine that not only reflects the unique characteristics of Pritchard Hill but also stands as a testament to Chappellet’s dedication to excellence.
