2022 Alpha & Omega Cabernet Sauvignon

2022 Alpha & Omega Cabernet Sauvignon

2022 Alpha & Omega Cabernet Sauvignon

Tasting Notes

This Cabernet Sauvignon is crafted to express the character of Napa Valley. Expect aromas of dark cherry, cassis, and subtle graphite notes with hints of tobacco and baking spices. On the palate, the wine typically shows a firm structure with layers of black fruit—think blackberry and plum—balanced by integrated oak nuances (vanilla and cedar) and well‐polished tannins that lead to a persistent finish.

Food Pairing

The 2022 Cabernet Sauvignon’s bold profile makes it a natural partner for equally robust dishes. Consider pairing it with:

  • Grilled or roasted red meats such as steak, lamb, or beef short ribs
  • Rich stews and braised dishes that can stand up to the wine’s tannic structure
  • Aged cheeses, particularly sharp cheddar or blue cheese, which complement the wine’s complexity

These pairings highlight both the wine’s depth and its capacity to balance rich, savory flavors.

Vineyard Sources

Our winemakers blended 89% Cabernet Sauvignon, 3% Cabernet Franc, 3% Petit Verdot, 3%

Malbec and 2% Merlot to create this structured, ageable wine. The wine was fermented in 50%

French oak barriques, 50% of which were new and 50% in stainless steel tanks followed by

aging for 18 months in French oak barriques of which 30% were new.

Vineyard Technical Specifications

Our Cabernet Sauvignon Napa Valley 2022 was handcrafted from a collection of vineyards

that celebrate the diversity of terroirs in Napa Valley. This wine showcases a range of Napa

Valley sub-AVA’s that include mountain grown grapes from Atlas Peak and Spring Mountain,

hillside grown grapes from Rutherford and valley floor grown grapes from Oak Knoll District

that create an evocative sense of place that could only be Napa Valley.

  • Vineyard Sources: Grapes are sourced from select Napa Valley vineyards known for producing concentrated fruit with natural tannin structure.
  • Blend and Composition: This varietal is generally made from 100% Cabernet Sauvignon, sometimes with a small inclusion of other Bordeaux varietals to enhance complexity.
  • Harvest and Fermentation: The grapes are hand-harvested at optimal ripeness. Fermentation takes place in temperature-controlled stainless steel tanks before being transferred to French oak barrels for aging.
  • Aging Process: The wine is typically aged for 18 to 24 months in oak, with a portion in new oak to impart additional spice and vanilla nuances, followed by time on lees to enhance texture.
  • Alcohol and Structure: The final wine generally comes in at around 14-15% alcohol, reflecting the ripe fruit character and balanced acidity typical of Napa Cabernet Sauvignons.
